Winter Cocktails

Chipotle Blood Orange Margarita

2 oz. Tequila Ocho Plata
½ oz. Triple Sec
½ oz. Chipotle Simple Syrup**
Fill with blood orange juice

Shake and serve in a rocks/ bucket glass

Salted rim, lime garnish

**Chipotle Simple Syrup recipe
We normally make 2 quarts at a time
1:1 ratio water to sugar
1 Chipotle pepper (per quart)
1 oz. Adobo sauce (per quart)

Heat to dissolve sugar. Add peppers and sauce
when ¾ incorporated. When fully dissolved,
pull from heat and chill in an ice bath.

We use canned Embasa chipotle peppers in adobo sauce.





Kiwi Mojito (Down Over Mojito)

2oz. Ron Diplomatica Blanco
½ oz. Lime Juice
½ oz. Kiwi Simple Syrup**
½ Rangpur Lime (quarter)
1 oz. Chopped Oranges
3-5 Mint leaves shredded (depending on size)

Shake and serve in Collins glass

Sugar rime, lime & orange twist garnish

**Kiwi Simple Syrup Recipe
1:1 ratio water to sugar

Heat to dissolve sugar, when fully dissolved
add kiwi(skinned and sliced) pull from heat and chill in an ice bath.
