Poppy Seed Coleslaw
Serves 4

Salad Dressing

½ cup mayonnaise
¼ cup sour cream
2 tablespoons rice or apple cider vinegar
1 tablespoon sugar
½ teaspoon salt
½ teaspoon freshly ground pepper
2 shakes Tabasco sauce
1 shake Worcestershire sauce
½ tablespoon poppy seeds or celery seeds

Coleslaw

½ head green cabbage cored, quartered and finely shredded
¼ head red cabbage cored quartered and finely shredded
½ bell pepper each (red, yellow or orange – choose 2 different colors), sliced into thin strips
2 scallions, green tops and root end removed, sliced into very thin strips

Mix the salad dressing ingredients together. Set aside and refrigerate.

Combine together the cabbage, bell peppers and scallions and refrigerate.

When ready to serve add the salad dressing to the cabbage and mix well to combine. Add salt and pepper to taste.
