Chocolate Oatmeal Cookies

¾ cup butter
1 cup brown sugar
½ cup sugar
1 egg
¼ cup water
1 teaspoon vanilla extract
3 cups oats (rolled oats not instant)
¾ cup flour
¼ teaspoon salt
½ teaspoon baking soda
6 ounces milk chocolate, dark or white chocolate chips or chopped
Or 6 oz. golden raisins

In an electric mixer, cream the butter and both sugars together until light and fluffy. Add the egg and vanilla and mix well.

Separately, combine the oats, flour, salt and baking soda. Mix well. Add ½ of the dry ingredients to the butter/sugar mixture and mix. Add the water and the remaining oats mixture and mix well. Stir in the chocolate or raisins.
Chill for 30-40 minutes-it helps the oats adsorb the water.

Preheat the oven to 350°

Using a 1½ or 2“ scoop drop the dough onto a baking sheet lined with parchment paper or a Silpat leaving 2” between each scoop. Press down to slightly flatten with the back of a wet spatula or a glass.

Bake until done 12-15 minutes until golden brown. Cool 5 minutes before moving to a cooling rack. Cool completely.
