This rub works really well with steak or pork, including my “Fallin’ Off the Bone Ribs.” I like to sprinkle it liberally all over the meat and then brush with olive oil. Do this at least 30 minutes before grilling to allow for the flavors to develop. Then as the meat is grilling, brush with BBQ basting sauce (below).

BBQ Spice Rub
1 1/4 cup Smoky Spanish Dulce paprika (not hot)
1 Tbs. + 2 tsp. Ancho chili powder
3 Tbs. + 1 tsp. Allepo or Espellete pepper powder
3 Tbs. + 1 tsp. celery seed
3 Tbs. + 1 tsp. salt
1 Tbs. + 2 tsp. garlic powder
2 1/2 tsp. Chipotle chili powder

Mix well. Sprinkle liberally over both sides of the meat. Let marinade for at least 30 minutes and up to 24 hours.

BBQ Basting Sauce
1/4 cup ginger, grated fine
1 cup white wine
1 1/2 cups soy sauce
1 cup sugar
1 cup ketchup or BBQ sauce of your choice
1/2 cup garlic, minced
2 teaspoons cracked, black peppercorns

Combine all ingredients in a pan and bring to a boil. Cook until the sugar is dissolved and the contents are reduced by a quarter.  Let cool then refrigerate in a small bowl until use.
